Spaghetti alla Nerano By buchu · 2026-05-09 first-coursepastavegetarian Average: 4.5 Original recipe Servings Ingredients 320 g Spaghetti 700 g Zucchine 30 g Parmiggiano Reggiano 150 g Provolone Pepe nero 3 unit Basilico 1 unit Aglio 30 g Olio EVO Steps Cut the zucchine as thin disks and fry them in oil at 150C, until slightly goldened (5-6 minutes) Roughly grind provolone and parmiggiano, keep aside Bring abundant, salted water to boil and cook the spaghetti for 6 minutes Pour the 30g oil into a large pan, along with a couple of cloves of garlic. Fry the garlic and eventually remove. Toss the zucchine, add water from the pasta to moisturize. Drain the pasta and throw it into the pan. Keep adding leftover water for 3 minutes, then switch off the heat and add provolone and basil in small strips. Add parmiggiano and serve
